Spice poached pears

    Spiced Poached pears
    4 pears (Bosc or any firm variety)
    1/2 cup honey
    4 long zest of lemon or orange
    2 table spoon lemon juice
    2 star anise
    10 pepper corn
    1 vanilla pod split in two with the seed grated
    1 tea spoon vanilla extract
    1 chili pepper (I left it out but added a few cloves)
    Enough water to cover the pears

    Chocolate Sauce :
    3 oz bitter sweet chocolate (I ended up using milk Toblerone)
    1/2 cup of the poaching liquid, slightly reduced.

    Spiced Poached pears

    Peal the pears and cut in half. Remove the core with a spoon or a small sharp knife.

    In a pot mix the honey, citrus zest, lemon juice and the spices. If you are using the vanilla pod add it now.

    Layer the pears in the casserole then just barely cover with water. Cover with parchement paper or with the pot's lid. Simmer (the liquid should be moving but not bubbling) until the pears are tender but not mushy (about 15-20 minutes).

    If you are using the vanilla extract add it now.

    Let the pears cool down in the syrup and put in the fridge..

    To serve

    With vanilla ice cream
    With mascarpone cheese (thin it out with the syrup)
    With a chocolate sauce.
    Cold or room temperature with yogurt.

    Sauce au chocolat

    Put the poaching liquid in a sauce pan and reduce. Take off the heat and add the chocolate and let melt. Spoon over the pears.

    hum... I think the meat would be too touch for poaching...

    However spice braised bear might be getting us somewhere
